1 boneless beef chuck roast (4-5 lbs)
2 medium onions, coarsely chopped
1 – 16 oz. jar sliced pepperochini, undrained
1 – 8 oz. jar pickled jalapeno slices, drained
1 – 12 oz beer
2 envelopes onion soup mix
5 cloves garlic, minced
1 tsp pepper
Garlic salt to taste

12 rolls, split
12 slices provolone

Cut roast in half; place in 4-5 qt slow cooker. Add the onions, pepperoncini, jalapenos, beer soup mix, garlic, pepper, and garlic salt.

Cover and cook on low for 8 hours or until meat is tender.

Remove meat. Skim fat from cooking liquid. When cool enough to handle, shred meat with two forks and return to slow cooker; heat through.

I slice rolls, lightly butter and toast in the broiler. Remove, add mayo, mustard, horseradish, or what ever you like.

Place a scoop full of drained meat on roll, add cheese and broil to melt.
