• Beef tips or Stew Meat - 2 lb
• Meat, Ground - 10 1/2 oz
• Onions, Chopped - 1 c
• Peppers, Green, Chopped - 1/2 c
• Vegetable Oil - 1 2/3 T
• Tomatoes, Canned (#10) Chopped - 2 c
• Flour, All-Purpose - 1/4 c
• Water - 2 c
• Pepper, Cayenne - 3/4 tsp (to taste)
• Salt - 1 1/2 tsp
• Cumun - 3/4 tsp

Directions:
1. If frozen, thaw meat under refrigeration.
2. Rinse onions and green pepper under cool running water. Chop using clean, sanitized utensils.
3. Brown meat in vegetable oil until the meat loses its pink color.
4. Add onions and green pepper. Sauté until tender but not brown.
5. Add tomatoes.
6. Mix flour with water until smooth using clean, sanitized utensils.
7. Add flour mixture to tomato mixture.
8. Add cayenne pepper, cumin, and salt.
9. Simmer until meat is tender and sauce begins to thicken.
10. Internal temperature of product must register 155ºF for 15 seconds at the completion of the cook.
11. Serve 1 c per portion.
