4-6 cups of bread cubes - use herbed and flavored bread for best results.
1 lb. Sausage
2 chopped tomatoes
4 cups (or more) grated cheese
18 eggs
1/4 c. Milk
1 tsp dried mustard (optional)
Salt and pepper to taste
Green onions, optional

Cut bread up into cubes. Don't be boring! Use a mixture of bread, such as herbed, sourdough, oatmeal, french, etc.

Spray a deep 13x9 inch glass dish with vegetable spray. Add in the bread cubes to the bottom of the dish. Sprinkle the sausage, tomatoes and 1/2 the cheese over the bread cubes. Again, don't be boring on the cheese - you'll want sharp cheddar or a mix of cheddar, swiss, jack.

Beat the eggs and milk together, add in mustard and salt and pepper if you like. Pour over the bread cubes. Cover with foil and refrigerate overnight.

The next day, put the foil-covered dish, in the oven at 350º. Bake about 45 minutes, or until firm. Take out of oven, and sprinkle the remaining cheese over the top. Return to the oven until the cheese is melted.

Cut into squares and serve. It's best when hot, but it's pretty good even when cold.

This is a great dish to make in advance for a house party, or a breakfasty potluck. It's also great to take on a long car ride, just cut into squares and place each into a baggie. Store in an ice chest while traveling.

The important thing is not to be bland with this. Stores sell french bread sprinkled with garlic or onions or a mix of herbs, that's great. Using leftover stale bread is ok, too.
