-- Tomato Sauce........ 3/4 c.
-- Chili Powder......... 5/8 tsp.
-- Garlic Powder......... 3/8 tsp.
-- Cumin........ 5/8 tsp.
-- Flour, All Purpose.......... 1 5/8 tbsp.
-- Vegetable Oil......... 1 1/4 tsp.
-- Onions......... 2/3 c.
-- Beef Base.......... 5/8 tsp.
-- Water......... 3/4 c.
-- 20 Corn Tortillas
-- Pan Spray........ 3/8 oz.

Directions:1. WASH HANDS before beginning of preparation. SANITIZE surfaces and equipment PREPARE: Dice Onions. Refrigerate 1/5 of the cheese
2. Mix Spices and Tomato Sauce. Saute Onion in pan, release when golden brown. Combine shredded cheese, Onion and 1/2 of Tomato mixture and maintain. Heat oil and add Flour, stir about 5 minutes till golden brown. Add Tomato Sauce mixture and continue to heat; stirring often.
3. Prepare Broth from base and water/ Place corn tortillas in broth momentarily to soften. Add remaining base to tomato mixture; continue to simmer Sauce. Add flour and start stirring constantly until starting to thicken
4.Fill tortilla with cheese mixture. Roll and place seam down on pan. Refrigerate until ready to bake . Sprinkle cheese on top of enchilada
5. Bake for 20 minutes at 350F to internal temp 155F for 15 sec
6. Cool
7. Reheat |
