Pour water into sauce pan, add butter. Bring water to boiling until butter is melted. Remove from stove. Add in flour, cocoa, sugar and salt. Stir vigorously until it forms a ball. (Optional: Let sit about 20 minutes. I read this will help it be puffier.)
With a hand mixer or a spoon, stir in eggs one at a time, until smooth and shiny. Drop by spoonfuls onto cookie sheet. Bake at 400 for about 35 minutes - or until firm and puffed up.
When you remove them from the oven, poke them with a knife on the side so that the steam inside can be released.
Split puffs open, scoop out soft dough inside, discard. (Little kids will like eating this part, probably.)
Filling: While the cream puffs are baking, make up the filling. Put the 2 TBS of water in a glass measuring cup. Sprinkle the gelatin packet over the water, let sit for a couple of minutes until softened. Place the measuring cup in the microwave, microwave on high for about 15 seconds, or until the water is hot. Stir until the gelatin dissolves.
Add the creme de menthe to the water, stir well. Place in the refrigerator until it thickens slightly.
In the meantime, start whipping the heavy cream. Beat in a mixer until soft peaks form, add powdered sugar. Mix until hard peaks form. Slowly add in the Creme de menthe mixture, continue mixing until creme de menthe is completely absorbed. Place in refrigerator.
After cream puffs are cooled, scoop whipped cream mixture onto the bottom of each one, and place the top of the cream puff over the mint filling.
Glaze: Melt the chocolate chips and the butter in the microwave for about 30 seconds. Remove, and stir until the butter is completely stirred into the chocolate and it is runny, although not too thin.
Drizzle the chocolate glaze over the cream puffs. Keep chilled until served. |

Notes: This recipe is almost in the experimental phase. It was one of my favorites and in my personal cookbook that I lost when the house burned down. I have searched online for the exact recipe, but can't find anywhere. (Dazzling Mint Chocolate Cream Puffs.) I have a list of the ingredients, but no instructions, so I write this a bit by memory.
So, prepare at your own risk! That being said, I did make it last year for a dinner, and I can assure you, they were gone in a moment.
They are very good on Christmas cookie trays, just make tiny ones about 1 1/2 inch round.
They can also be frozen quite well.
They are delicious!
