1 ½ C Graham Cracker Crumbs
3 T Sugar
¼ C Butter, Melted
PAM

Filling:
3 Packages (8 oz Each) Cream Cheese Softened
1 ¼ C Sugar
6 Eggs Separated
1 Pint Sour Cream (16 oz)
⅓ C Flour
2 tsp Vanilla
Juice of ½ Lemon
Directions:
Directions:
To make crust, spray a spring form pan with PAM. Place the spring form pan in the center of a 12 inch piece of aluminum foil and press foil around side of pan. Combine graham cracker crumbs, sugar and melted butter in a bowl until well blended. Press the crumb mixture into the bottom and slightly up the sides of the pan. Place in fridge while preparing filling. To make filling, with electric mixer on low speed, beat cream cheese in a large bowl until soft. Gradually beat in sugar until light and fluffy. Beat in egg yolks one at a time until well blended. Stir in sour cream, flour, vanilla, lemon juice and beat until smooth. Beat egg whites in a separate bowl until they hold stiff peaks. Fold whites into the cheese mixture, soufflé fashion, until well blended. Pour into prepared pan. Place a pan of water in lower rack of oven and place cheesecake on center rack. Bake in 350 º oven for 1 hour and 15 minutes or until top is golden. Turn off oven and allow cake to cool in oven for 1 hour. After hour, remove cake from oven and allow to cool on a wire rack at room temperature. Chill overnight before serving
