3 C. Oil for deep frying (Peanut or vegetable oil)

Batter:
1 C. Flour
1 tsp. Baking Powder
1/2 tsp. Salt
1/4 C. Sugar
1 Egg, slightly beaten
1 Tbsp. Butter, melted
1/2 C. Milk
1-1/2 C. Fresh Corn, cut-off the cob (or 12 oz. can Whole Kernel Corn, drained)
1 tsp. Vanilla Extract

Directions:
Directions:
Heat oil in a deep fryer to 365.º
Combine all batter ingredients together. Drop batter by spoonfuls into the hot oil.
Turn fritters over and fry until golden brown on all sides. Using a metal, slotted spoon, Remove fritters and drain on several layers of paper towels.
Fry fritters in small batches, do not overcrowd.
Dust drained fritters on all sides with powdered sugar a couple of times.

Serve with Honey Butter or Maple Butter, if desired.
