Directions:In a cast iron skillet, melt butter over med-high heat. Sprinkle flour over butter, whisk until smooth and continue to whisk until it becomes a few shades darker than you want your gravy to be. For old fashion white gravy, cook about 1-2 minutes until flour has cooked out. Combine canned milk and water. Slowly pour about 1 cup of milk mixture into pan whisking until smooth. Slowly whisk in remainder of milk. Add salt and pepper to taste at this time. Whisk continuously until gravy is just thinner than you want it to be and remove from heat. Gravy will thicken as it stands. Serve over biscuits, rice or anything else you want besides your arm... that would be dangerous!
For sausage gravy: brown crumbled sausage and add only 2-3tbsp butter and continue with recipe. |

Notes: Mix your milk and water in the serving bowl you want to use. If you need more milk, use regular 2% or whole milk to bring it up to the amount of gravy you want to serve.
