Ingredients: 1/2 c. hot water 2 1/4 c. dry yeast 2 large eggs room temperature 1 tsp. salt 2/3 c. sugar 1/2 c. unsalted butter room temperature 4 1/4-1/2 c. all purpose flour

Directions:Bake potatoes for about 15 mins. Test potatoes by pricking with fork or if soft and squeeze able Peel and mash potatoes well try and have as less lumps as possible Place mashed potatoes in a large bowl Add hot water, yeast, eggs and half the sugar Add 2 c. flour and salt Mix, dough should be kinda sticky Cover bowl and place in a warm place until doubled in size Meanwhile mix butter and remaining sugar until smooth and creamy Once dough has risen add butter and sugar mixture Now this is when you got to get your hands all in the mix so ladies now is when you you want to take off your rings otherwise you'll have dough all up in those rings so bare hands are better mix well and you're really gonna have to get in there with you hands you want dough and butter and sugar mixture to be well Incorporated Dough should be very sticky at this point Once fully mixed slowly add remaining flour about 1/2 c. at a time Mix until dough no longer sticks to side of bowl and is smooth and manageable Place dough on floured surface and knead until dough is smooth if still a little sticky add a little more flour Brush bowl with butter shape dough into ball and place in buttered bowl making sure dough is coated with butter you can just roll dough in bowl to make sure dough is covered Place bowl in warm place and let double again in size.
