This recipe makes 2 pans of dressing. Cut the cornbread, eggs, and broth in half for one pan.
2 big pans of cornbread 91/2 x 13
lots of butter
4 eggs
almost 1 loaf of toasted bread
green onion
bell pepper
celery
1/2 tablespoon or more of poultry seasoning
4 cans of chicken broth and or broth from the freshly cooked turkey
giblets and the broth - ground up
turkey - chopped or ground up

Make a big pan or two of cornbread. Let it cool. Toast the loaf of bread to add later. Dice up the green onion, celery, and bell pepper. Saute a stick of butter, celery, green onion, and bell pepper in a pan. Set aside. Crumble the cornbread in a huge pan. Add the torn up pieces of toasted bread. Add melted butter to the cornbread and toasted bread. Add 4 eggs. Mix well. Add the chicken broth and or turkey broth from the turkey a little at a time. Add more broth until the dressing is soft enough to stir easily. Add the sauted vegetables. Add poultry seasoning until satisfied with the taste. Add the chopped up giblets and turkey to the ingredients. You can add the water from boiling the giblets too. Mix well. Taste it to see if it tastes good before cooking. Do not be afraid to add more poultry seasoning if needed. Bake in the oven at 350 degrees for about an hour and a half. This makes 2 pans of dressing.
