Speedy Chicken and Dumplings Recipe

2 Chicken breasts
8 Cups Water (or Chicken broth – I like broth)
1 Tbs salt
1-2 stalks celery sliced
1 medium onion chopped
3 tsp chicken bouillon (if you use only water)
½ tsp pepper
1 bay leaf
¼ cup flour
½ cup cold water


Fluffy Dumplings

1 ½ cups flour
1 tbls parsley
2 tsps baking POWDER
½ tsp salt
2/3 cup milk
2 tbls oil
1 egg, slightly beaten

Directions:
Directions:
Mix all ingredients EXCEPT flour and ½ cup water in large saucepan. Heat to boiling, reduce heat. Simmer 1-2 hours or until chicken is tender. Remove chicken to cutting board, cool, then shred or cut up in to small pieces. Skim fat from broth.

Mix up dumplings (recipe below).

Combine flour and ½ cup water with fork until smooth. With whisk, add to broth. Heat until it boils and thickens, stirring constantly. Add chicken. You may have to add more broth so you have plenty of liquid (maybe a cup). Bring back to a low boil, stirring so it doesn’t stick.

Drop dumplings by rounded tablespoon on top of hot mixture, cover tightly, boil gently (reduce heat to low-medium). Cook 12-15 minutes or until dumplings are fluffy and dry.

Fluffy Dumplings

Combine first 4 ingredients. Stir in remaining ingredients, JUST until dry ingredients are moistened. Drop by tablespoonfuls onto hot chicken in boiling stew. Cook covered, 12-15 minutes or until dumplings are fluffy and no longer doughy underneath.


**Refrigerated biscuits make easy dumplings. Cut into quarters and arrange on hot stew; simmer covered as directed.
