Sweet Potato Pie Recipe

2 29oz. cans of sweet potatoes, mashed
1 c. sugar
1/2 stick butter, melted
2 eggs
1 tsp. vanilla
1/4 tsp. salt
1/4 tsp. cinnamon
1/4 tsp. ginger
1 c. milk
2 pie crusts
Cool Whip to serve

Directions:

Preheat over to 350º.
Oil or spray pie dishes and lay out pie crusts.

Mix ingredients in order, from top to bottom, mixing in between. When adding milk, pour in a little at a time and use mixer on low speed. keep adding a little at a time until all milk has been added. The mixture will be watery.

Divide mixture into the two pie crusts evenly.

Bake for about an hour. Pies are done when you can insert a knife into the center and it comes out clean.

Cool completely and serve with Cool Whip.

Quinton's favorite pie is Sweet Potato which I thought sounded very gross when I first met him. Potatoes in a pie? Nasty! Turns out, it's delicious and this is the BEST recipe for it.
