3 egg yolks
1/2 cup sugar
1/4 cup boiling water
1/2 tsp vanilla
3/4 cup flour
1 tsp baking powder
1/4 tsp salt
1 can chopped pineapple or pineapple rings

Directions:
Directions:
Preheat oven to 375º F. Beat egg yolks at high speed until thick and lemon colored, about 4 minutes. Add sugar gradually. Beat in boiling water and vanilla, mix at medium speed for 1 minute. Sift dry ingredients together and add to egg mixture and beat at low speed for 30 seconds. Spread pineapple in bottom of 13 X 9 pan, or in medium sized cast iron skillet. Spread batter over pineapple. Bake for 35 minutes. Cool 10 minutes, turn out on platter or serving plate.

I have added a step to the one I make. I melt 4 tbsp of butter in the skillet, then sprinkle brown sugar over the butter. Add pineapple rings and then add a maraschino cherry into the holes of the pineapple before pouring the dough over it.
