3 bell peppers
3 onions
1-2 stalk of celery
4 pans of Cotton Country Cornbread
1 small loaf of toasted white bread
1 dozen eggs
4 sticks of butter
Salt and pepper (lots of pepper to taste)
1 whole hen (broth only) (Save 2 cups for gravy)

Directions:
Directions:
Crumble cornbread and toasted white bread in an extra large pan. Crack all of the eggs on top of the crumbled bread mixture add melted butter as well.
In a skillet, sauté onions, bell pepper, celery in the hen broth (enough to sauté). Pour the sauté mixture over the cornbread mixture and mix these together well. Add salt and pepper to taste, the pepper makes it. Keep adding hen broth to the mixture until consistency is fairly juicy. This keeps the dressing moist.
Bake at 400 degrees in a preheated iron skillet with butter. Cook cornbread dressing until it is firm and brown.
Gravy:
2 cups of hen broth
4 bolied chopped eggs
Giblets from hen
4-6 Tbsps. of raw dressing

Boil all this together, stir well. Serve over cooked dressing.
