2 cups Sunshine graham cracker crumbs
1/2 cup of sugar divided
2 pounds Philadelphia brand cream cheese
2 large eggs slightly beaten
1 tsp vanilla extract
2 TBS cornstarch
1 cup sour cream

Preheat oven to 450º

In a bowl place graham cracker crumbs , butter and 2 TBS sugar, mix well. (take out 2 TBS of mixture for topping at the end, set aside)

Take crumbs and press firmly into sides of a greased 9 inch springform pan. Chill in the freezer while preparing filling.

With a mixer, beat cream cheese and remaining sugar until smooth and light

Beat in eggs, vanilla and cornstarch until well blended

Fold in sour cream.

Pour mixture into the prepared crust and bake for 10 minutes. Reduce temp of the oven to 200º and bake for 45 minutes . Turn off oven and allow to cool with the door slightly open for 3 hours.


Remove sides from spring form pan.

Sprinkle with remaining crumbs and chill.

Top with any cherries or strawberries if desired.
