5 or 6 potatoes, peeled and cubed
Fresh oakra, sliced
Fresh squash, sliced
3 or 4 green tomatoes
1 small sweet onion, sliced
Oil for frying
Ripe fresh tomato for eating on the side

Directions:
Place oil in an iron skillet and heat. Add all of the vegetables and let cook on medium heat, stirring often until vegetables are done. Enjoy with a ripe fresh tomato

My Mother made this all the time during the summer when fresh vegetables were plentiful from the garden. It was so good but of course we all complained about having it so often. Now I would give anything to have a big plate of this made by her because it just doesn't taste the same when I make it.
