3 cups AP flour
2 tsp. baking powder
1/2 ts. salt
1 cup sweet butter
1 1/2 cups white sugar
2 eggs
1 tsp. vanilla
3 tsp. anise seed
2 tsp. of lemon zest
1 tsp. anise extract (nice but not necessary)

Sift together the first three dry ingredients. In a large mixer cream the butter and sugar. Beat the eggs into the butter mixture one at a time then add the vanilla, anise, zest, and extract. Add the flour in gradually until completely incorporated.

Divide the dough into three pieces. Using sheets of plastic wrap form the dough into logs. Refridgerat the dough for at least an hour or longer. It is possible to freeze this dough. When ready to use, cut chilled dough into 1/4 inch thick slices. Preheat the oven to 350. Bake 8 to 10 minutes till edges are slightly golden. These are easy to over bake so lean toward under and let them finish off on cookie sheet after you pull them out of the oven.
