4 tsp yeast
1 TBSP sugar
1 c warm water
2 c milk, scalded and cooled
1/3 c margarine
1 egg, well beaten
1 tsp salt
1 cup sugar
1 c raisins
6 ½ c flour, divided (3 cups and 3 ½ cups)

Directions:

Sprinkle yeast in 1 cup water and 1 TBSP sugar. Add milk. Let rise 10 minutes.
Add 3 cups flour and beat well. Cover and let rise about 1 hours. (This is called the sponge).
Cream butter, egg and salt in 1 c of sugar. Add creamed mixture and raisins and balance of flour to sponge. Turn onto board and knead lightly. Cut into 4 sections then let rise for 15 minutes, covered. Cut each section into 2 (8 pieces now). Roll ¼ inch thick. Slash. Place on well-greased pan and let rise about 1 hour or more. Brush with egg and water (mom doesn’t?).
Bake 20-25 minutes at 350 F.
Hints: Warm oven. This makes a soft dough (not like bread)
