Redfish fillets, skin on
Cajun seasoning
sprinkle of cinnamon
butter
garlic, chopped
lemon

Directions:
Directions:
Heat grill and season fish
Place fish on grill, skin side down. Cook for 10-12 minutes until fish flakes easily,
Melt butter and add chopped garlic to taste. Baste fish with butter-garlic mixture before removing from the grill. Squeeze lemon juice over the fish and serve immediately.

I have served this for the 4th of July. It is delicious. I am sure there are other fish that are comparable to redfish and that you can use this recipe for. The sprinkle of cinnamon is the trick to this recipe.
