10 pound pork butt(trim away from bone and cut into small pieces by hand for best results)
1 level teaspoon salt per pound
2 1/2 tablespoon pepper
2 1/2 cloves garlic, chopped fine
Marjoram

Put meat through coarse blade of food chopper
Mix all the ingredients with 2 cups cold water by hand. Let stand overnight in a cold place. Next morning, mix with 1/2 cup more cold water and put into casings. Two strong people have to be involved in this process. One person turns the grinder and the other person holds the casing. This is the basic recipe that Al follows. You can check out what he said in his recipe. He adds more spices as he prepares. We have learned to use the coarse blade. It makes a big difference in the texture of the sausage. To serve, boil the kielbasa one to 1 1/2 hours.
