3 or 4 large chicken breasts
1 can cream of chicken soup
8 oz sour cream
1 roll Ritz crackers
1 stick butter
1 t poppy seeds

Directions:
Directions:
Cook the chicken until tender, then remove from the bone and cut into bite sized pieces.
Place in bottom of 9" x 13" casserole dish.
Mix soup with cream. Pour over chicken.
Crush crackers and sprinkle over soup mixture.
Melt butter and pour over crackers.
Sprinkle top with poppy seeds.
Cover and refrigerate overnight.
Bake uncovered at 350º for 45 minutes until bubbly.

My sister-in-law prepares this each time we visit in TN because she knows it's one of our favorites. She gave me the recipe in 1989 and I haven't changed any of it. Easy, but you must plan a day in advance!
