For Jello mix:
6 oz pkg any flavor Jello (I like Strawberry/Banana best)
2 c boiling water
1 1/2 c cold water
1 small can crushed pineapple (drain, save juice for topping)
2 c miniature marshmallows

For topping:
1/2 cup sugar
1 egg, beaten
1 T flour
4 oz. cream cheese
1 small container Cool Whip
1/4 cup flaked coconut (optional)

Directions:
For Jello: Mix jello with hot and cold water, as per instructions on box. Pour into 9" x 12" dish. Let congeal a little in 'fridge.
Mix drained pineapple and marshmallows into jello. Replace in 'fridge.

Cook and stir on medium heat the sugar, juice, egg, and flour until thick.
Mix in cheese and let cool.
Fold Cool Whip into mixture.

Pour over jello and sprinkle with coconut.
Keep in 'fridge until ready to serve.

In 1972 I was librarian at Greeneville, TN high school where my aide, Elizabeth Weems, gave me this recipe. She called it "Apricot Salad" and they had apricot jello at that time, but they didn't have Cool Whip. Her recipe called for a package of Dream Whip, which was a powder that you added milk to and then whipped. I'm for easy, so when Cool Whip came out, I changed the recipe!
