1 c butter, at room temp
1 3 oz. package of cream cheese, softened
1 c sugar
2 to 4 teas grated lime peel
1/4 teas salt
1 egg yolk
1 T lime juice
2 1/2 c flour
Lime icing: 1 1/2 c powdered sugar, 3 - 4 T lime juice

In large bowl, beat butter & cream cheese with mixer on high for 30 seconds. Add sugar, lime peel & salt. Beat in egg yolk & lime juice until well mixed. Beat in as much flour as you can with mixer. Use wooden spoon for the remaining flour. Chill 1 hour. Shape dough in two 10 inch long rolls, Wrap rolls in wax paper and chill 4 - 48 hours. Cut into 1/8 inch slices. Place 1 inch apart on ungreased cookie sheet. Bake at 375º for 8 minutes. Cool for 1 minute. Remove to a wire rack. Drizzle with Lime Icing: Mix 1 1/2 c powdered sugar with 3 - 4 T of lime juice.
