1 large sweet potato
1/4 cup vegetable oil
1 tablespoon honey
1 egg, slightly beaten
1 cup unbleached flour
Directions:
Directions:
Bake sweet potato in oven for approximately 40 minutes. After baked potato has cooled, remove the skin and mash.
In a mixing bowl combine oil and honey. Add egg and mashed potato and mix well. Add flour to mixture and combine.
Drop mixture by rounded tablespoons onto a greased baking sheet. If mixture is too dry, add a very small amount of vegetable oil; if mixture is too wet, add a small amount of flour until the mixture is consistent.
Bake at 350º for 20 minutes and cool on a wire rack.
Store treats in an airtight container in the refrigerator.
