1/3 cup bacon grease
2 tbsp. flour
2 tbsp. sugar
3/4 cup water
1/2 cup vinegar
1-1/2 tsp. salt
dash of pepper

She doubles recipe: so use
31/2 - 4 lbs potatoes
1 lb bacon
1/2 large onion
3 stalks celery
Directions:
Directions:
Cook, peel and slice potatoes. Add cut up celery and onion. Cut up and fry out bacon, add bacon to cut up potatoes.
To bacon grease add flour and stir until smooth. Add sugar, salt, & pepper. Gradually add water and vinegar stirring to keep smooth. Cook over low heat and stir until thickened.
Pour over potato salad.

Mrs. Schneggenburger was Mark's Mom.
She was famous for her German Potato Salad so at her Wake the Family supplied the Recipe. I reconfirmed some things with Mark as his Mom just did this from memory. The Sauce needs to be DOUBLED to cover the 4lbs potatoes.
