20 oz. pkg. beans
Ham hocks or ring of smoked sausage, chopped
1 lg. onion, chopped
1 lg. can tomatoes
1 tsp. chili powder
Juice from 1 lemon
1 clove minced garlic, optional
Salt and pepper

Directions:
Directions:
Wash beans thoroughly. Place in a pan or kettle and cover with water and 2 T. salt. Soak overnight. In the morning, drain, add 2 qts. water. Add ham hocks or sausage and bring to a boil. Simmer slowly 2 1/2 to 3 hours. Add onion, tomatoes, chili powder, lemon juice and garlic, salt and pepper. Simmer another 30 minutes.
