160g short grain rice
450g coconut cream
500g milk
80g castor sugar
zest of lemon
1/2 tsp Vanilla Paste
150g whipped cream
15g Lime or lemon Juice

Directions:
Directions:
Rinse the rice in cold running water.

Place rice, coconut milk, milk, zest, sugar and vanilla paste into the TM bowl.

Cook 50 minutes, 90ºc, speed 1, reverse. Check towards the end to make sure it doesn't become too thick,

Cool for at least 10 minutes before stirring through whipped cream and lemon or lime juice.

Spoon into serving dish and serve topped with a fruit coulis such as passionfruit if preferred fresh fruit such as kiwi fruit.
