4 cups Russet potatoes (riced)
1/4 cup whipping cream
1/4 cup melted butter
2 cups flour (+/- depending on consistency of potatoes)
Pinch of salt

Directions:
Cook potatoes the night before. Rice potatoes while still warm.
Refrigerate overnight.

The next day, rice potatoes again and add whipping cream, butter and salt.
Gradually add in flour and mix together. May need to add more or less flour depending on consistency of potatoes.

Prepare pastry board covered in cloth. Lightly dust with flour. Prepare rolling pin covered in Lefse sock. Lightly dust rolling pin with flour.

Take piece of dough and roll into a ball ( golf ball sized). Flatten the ball in your hand and place on pastry board. Lightly dust flattened ball with flour. Roll until 1/8" thick.
Using notched rolling pin, make a light pass over one side of rolled out dough. Just enough to dimple one side.
Transfer onto griddle set to medium high heat. Cook on both sides and remove from griddle to cool.
