Prime Rib Roast Recipe

You can choose any size roast you wish and just adjust recipe as needed
One clove garlic per pound of meat (cut into slivers)
One cup Dijon mustard ( per 4-5 pounds meat)
1/4 c. Soy sauce per 4-5 pounds meat
3 T. Fresh coursely ground pepper

Directions:

Have butcher cut meat from bones then tie back onto meat
Bring meat to room temp.
Place in large roaster pan
Cut slits into top of meat and push a sliver of garlic into each incision
Combine mustard and soy sauce and pour over top of meat
Top with the ground pepper
Preheat oven to 350 degrees
For rare bake to 120º
For medium rare130º
For five pound roast at rare takes about 1 1/2 hours
Let roast rest and then carve, remove strings and bones
