2 c. Sugar
1 1/2 c. Crisco Oil
4 Eggs
2 1/4 C. sifted flour
2 t. salt
2 t. baking soda
2 t. ground Cinnamon
3 c. grated carrots
11/2 c. chopped nuts (walnut or pecans)

Frosting:
8 oz. cream cheese, room temperature
1/4 c. soften butter
2 t. vanilla
1 lb. confection sugar

Pre-heat over 300 degrees
Butter and flour a 13 by 9 pan
Combine sugar, oil and eggs. Beat on medium speed for 2 minutes.
Whisk all dry ingredients together, add to Crisco Oil mixture.
Beat on low speed for 1 minute. Add grated carrots and nuts. Spread batter in prepared pan.
Bake at 300 degrees for about 1 hour. Cool.

Frosting:
Beat butter and cream cheese till smooth. Add vanilla. Gradually beat in Confectioners Sugar.
Frost with Cream Cheese Frosting.
