2 lb. powdered sugar
2 T. meringue powder ~or~
2 egg whites whisked until stiff
8 T. whipping cream
pinch salt
2 tsp. clear vanilla extract
2 tsp. butter extract
2 tsp. clear almond extract

Cream together shortening and powdered sugar. Add remaining ingredients and mix well.

This recipe makes a pure white icing. Use meringue powder or whipped egg whites for added firmness when piping or decorating a cake. Icing can be made without either ingredient. If using meringue powder, cake may be stored un-refrigerated for up to 3 days. If using egg whites, cake must be refrigerated.
