3 lb. stewing hen
Water to cover hen (16 c.)
3 Tbsp. salt
4 stalks celery
4 lg. carrots
2 onions
1/2 lb. butter
1 c. flour
1/2 c. chopped pimentos
1/2 c. chopped blanched green peppers
1 tsp. MSG
1/2 tsp. pepper
Yellow food coloring

Directions:
Directions:
Boil chicken with salt, celery, carrots and onion until tender. Strain off 8 cups of chicken stock. Add 1 can of chicken broth.

Make a butter roux by melting butter, then whisking in the flour. Bring chicken stock to a low boil, then slowly add roux. Simmer 15 minutes or less until soup takes on a glaze. Add pimentos, peppers, MSG, and pepper, stirring constantly. Add a few drops of food coloring if desired.
