2 1/4 cups milk
2/3 cup white sugar
1/2 cup flour
1/4 tsp. salt
3 egg yolks
2 tbsp. butter
1 tsp. vanilla
1 cup coconut, flaked or shredded
1 baked pie shell

Topping
1 cup whipping cream
1 tbsp. sugar
3/4 tsp. vanilla
1/3 cup toasted shredded coconut

Directions:
Directions:
Filling - Bring milk to a boil. In separate bowl mix together, sugar, flour and salt. Stir into boiling milk, cooking until it boils and thickens.
In another bowl place, egg yolks, butter and vanilla. Add about 1/2 cup of the hot mixture. Gradually add all of the egg mixture into the hot milk mixture stirring continuously until it all reaches a boil again and thickens. Cool 15 minutes then pour into baked pie shell. place plastic wrap directly on the surface of the filling and chill for several hours.

Topping - Whip cream until stiff then add in sugar and vanilla. Spoon onto pie. Toast a little coconut in a frying pan and sprinkle on top.
