Directions:Place a large pot of water on the stove. Peel the potatoes. Cut into 3 inch pieces. Put into pot of water. Cut onion into 1 inch pieces. Put into pot of water with the potatoes. Add a good amount of salt, 2 tbsp. Boil the potatoes for 25-35 minutes until tender, or until a fork inserted meets no resistance. Drain the potatoes in a colander, and add back to the pot. Add butter by the tablespoon, about 1 stick. Mash into the soft potatoes. Add milk, about 3/4 to 1 cup and whip the potatoes with the potato masher. Add salt and pepper to taste. Serve with any roast: beef, chicken, turkey, pork, or ham. |

Notes: I remember helping Grandma Annie in her kitchen every Sunday. We would go to the 9 o'clock Mass at Mission Church. After Mass we would stop at the bakery across the street from the church. She always ordered the same thing: 2 loaves of white bread sliced. We would walk home from there; she would open a loaf and hand me the heel of the bread as we walked. When we got home, around 10:45, she would gather the vegetables on the kitchen table. She taught me how to peel the potatoes and carrots (she used a paring knife, but I used the peeler). Together we would peel the vegetables and put them into pots of water. With that chore done, I would set the table. She would make tea, and we would share a slice of bread and butter. The best day of the week for me. I just loved being in the kitchen with her.
