1 cup butter, room temperature
1 cup brown sugar
1 teaspoon baking soda
1/2 cup warm water
1 1/2 cups flour
1/2 teaspoon salt
3 cups old fashioned rolled oats

Date Filling:
1 cup dates, chopped (pits removed) or 3/4 of a 375 g. package
1/3 cup sugar
1/3 cup water
1 1/2 teaspoons lemon juice
1 1/2 teaspoons butter

Directions:
Directions:
Beat the butter and sugar together. Dissolve baking soda in the warm water. Add the salt to the flour. Add flour mixture, oats, and water to the butter and sugar - and combine. Form into two balls, and chill until firm.

Roll out to 1/8" thickness, and cut in circles or rectangles. Place on a greased cookie sheet. Bake at 375º for 8 to 10 minutes. Cool on rack.

For filling, combine ingredients in a heavy saucepan or microwaveable bowl. Heat slowly, stirring often. Cook until dates are soft and the mixture is thick. Cool.

Use a knife to spread a thick dollop of date in the centre of a cookie, and then top with another cookie. Give a slight twist to screw them together.

These cookies freeze well.
