2 tbsp yeast
2 tsp sugar
1/2 c. warm water
3 c. hot water
2 tsp. salt
1 c. sugar
1/2 lb butter
8 well beaten eggs
5-7 c. flour

Directions:
Directions:
Set 2 tbsp yeast in 2 tsp of sugar dissolved on 1/2 c. warm water, set aside. In separate bowl, mix 3c. hot water, 2 tsp salt, 1 c. sugar, 1/2 lb butter and 8 beaten eggs. Add 2 cups of flour to liquid mixture. Mix well. Add yeast mixture. Mix well. Add flour until soft dough is formed, which is no longer sticky. Knead for 8-10 minutes. Cover and let rise for about 1 1/2 hours, until dough has doubled in size. Punch dough down. Roll out dough until 1/2 " thick. Cut out doughnuts. Let doughnuts rise, cover with light cloth, for about 1 hour, or until doubled in size. Fry in oil until golden brown on both sides.
