1 refrigerator pie crust
3/4 cup sugar (I use less depends on kind of apple)
2 tbsp. corn starch
1 tbsp. ground cinnamon
4 cups thinly sliced peeled apples (about 4 medium)
1 egg white, lightly beaten
1 tsp. sugar

Directions:
PREPARE crust as directed on package. I roll out on parchment paper on cookie sheet.

MIX 3/4 cup sugar, cornstarch and cinnamon in a medium bowl.
Add apples, toss to coat well. Spoon/place apples into center of crust, spreading to within 2 inches of edges, pleating or folding crust as needed.
Brush edge of crust with egg white: sprinkle with 1tsp sugar.

BAKE in preheated 425 oven 20 minutes or until apples are tender and crust is golden brown. Cool slightly before serving.

This is a recipe from McCormick Spices in a magazine. It is the closest thing I can make to an Apple Pie, while Dave has been making real pies all this year (2015) with apples from our tree!
