6 Tbsp butter
2/3 c light brown sugar
1 egg
1/4 c orange juice
1 tsp grated orange rind
1-1/3 c all-purpose flour
1/4 tsp baking soda
1/2 tsp baking powder
3/4 c chocolate chips
1/2 c chopped, dried apricots

Orange Icing:
1 Tbsp Butter
1/2 c powdered sugar
1/2 tsp grated orange rind
1 Tbsp orange juice

Directions:

Cookies:
1. Cream the butter and sugar until light and fluffy. Beat in the egg. Add the orange rind and juice.
2. In a separate bowl, combine the flour, baking soda, and baking powder. Add chocolate chips and apricots.
3. Combine the flour mixture with the butter mixture. Blend well into a batter.
4. Drop by teaspoons onto a lightly greased cookie sheet.
5. Bake at 350º F for 15 minutes.
6. Place on rack. Combine icing ingredients (below) and ice while still hot.

Icing:
Mix icing ingredients together.
Tip: if the cookies are iced while hot, the icing forms a shiny glaze. Reheat at 300 degrees for 3 minutes for that “just-baked” flavor.
