Grandma's Gnocchi Recipe

3 c. ricotta
3 c. semolina flour
salt

Directions:
Directions:
Mix flour and ricotta with a good pinch of salt for taste. Put some semolina on the table and spread out to roll dough on top of. Roll dough into long strips about 1 inch wide. Cut into 1 inch pieces and then roll down a cheese grater gently to shape. Spread out on a cloth in a single layer (not touching). Once dry, cook in salted boiling water until the gnocchi float (just a few minutes).

I found this recipe in with Grandma's things, but you could tell that it was just a quickly hand written recipe that was probably written to satisfy someone's request - because Grandma never had recipes! I'm not sure if it will work, or if anything was missing that only Grandma would know, so this may need a little testing and tweaking. I do know that some of my happiest memories include standing next to Grandma in the assembly line while she would cut and I would roll on the grater, followed by no sitting on Grandma's bed because the gnocchi were resting, and I thought that it would be wrong to keep it from those who may not have had that experience!
