1 cup dried apricots (about ¼ lb)
1 ½ cup boiling water
1 cup walnuts
2 ½ cup sifted all-purpose flour
3 tsp double acting baking powder
½ tsp salt
1 egg
1 tsp vanilla extract
1 cup sugar
¼ cup salad oil

Directions:
Directions:
Prepare the fruit & nuts: using scissors, snip the dried apricots into small pieces into a small bowl, add 1 ½ cup boiling water. Let cool. Chop the walnuts, coarsely, and set aside.
Preheat oven to 350 F. Grease a 9x5x3 inch loaf pan.
Sift the flour with baking powder & salt onto a sheet of waxed paper; set aside.
In a large bowl, combine egg, vanilla, sugar & oil with wooden spoon. Beat until well blended.
Gradually add apricot mixture beating constantly.
Bake
