Grandma's Easy Cornbread Recipe

3/4 c. all-purpose flour
1/2 c. whole wheat pastry flour
3/4 c. cornmeal
1/4 c. sugar
2 Tbsp. baking powder
1/2 tsp. salt
1 c. milk
1/4 c. vegetable oil
1 egg (or 2 egg whites), beaten

Directions:
Directions:
Preheat oven to 400º F. Whisk dry ingredients together. Add milk, oil, and egg, and stir just until moist. Pour into greased 8" or 9" pan. Bake for 20-25 minutes or until golden.

For corn muffins: Pour batter into greased or papered muffin tin, filling each one about 2/3 full. Bake at 400º F for 15-20 minutes.

To use a cast iron cornbread pan: Preheat oven to 425º F. Spray iron pan with oil and heat in the oven 5-7 minutes till hot. Fill compartments 2/3 full and bake about 15 minutes.

Serve with butter, honey, or syrup.

One time at Grandma Lila's house at Holter Lake, we accidentally used sesame oil instead of canola. It was still edible, but we wouldn't recommend it!
