1 3lb. chicken
1 onion, quartered
Rosemary stems
1/4 cup fresh chopped rosemary
Salt and pepper to taste
Olive oil

Directions:
Directions:
Rinse chicken and pat dry with paper towel. Rub with a little oil. Salt and pepper to taste. Quarter onion and place inside chicken with a few stems of rosemary. Place in foil lined pan and sprinkle with chopped rosemary. Cover loosely with foil and bake for 2 to 2 1/2 hours. Last 30 min. of cooking remove foil and allow to brown.
