2 1/2 cups whole wheat pastry flour or all purpose flour
2 tbsp brown or white sugar
2 tsp baking soda
1/2 tsp salt
2 cups nondairy milk like almond milk
1 small banana mashed

Strawberry syrup:
1 pound strawberries (frozen or fresh)
2-4 tbsp sugar
1/4 cup orange juice
1/2 tsp vanilla extract

Directions:
Directions:
In a big bowl, whisk together the flour, sugar, baking soda, and salt. Add milk and mashed bananas. Mix all together until there are no more dry spots, but don't over mix.

Makes about 12 pancakes

Syrup:
Chop strawberries into bean size pieces. Throw all ingredients into a sauce pan and warm over medium-low heat. Stir it around and bring to a gentle simmer. Let it go for 15-20 minutes, stirring every minute or so until the syrup thickens up and the liquid begins to evaporate. Let cool.

I think the recipe is best with 2 bananas and a little extra sugar.
