Nanny's Cream Pies (Vanilla, Chocolate & Coconut) Recipe

8 cups milk (whole milk)
12 large egg yolks
4 cups sugar
3 cups Pet Evaporated Milk
4 tablespoons margarine (or butter)
16 tablespoons cornstarch (1 cup)
3 teaspoons vanilla extract

Directions:
Directions:
** Add yolks to cold milk. Mix all ingredients except cornstarch and vanilla. Heat on medium heat to simmering boil. Turn off heat.

Mix cornstarch with approximately 1/3 cup of water. Add vanilla. Pour into mixture slowly, stirring briskly.

For Chocolate Pies:
Using same vanilla mixture, as above: add semi-chocolate chips to taste - about 1/2 bag per pie.
OR.....use cocoa, mixed with small amount of milk, to taste.

For Coconut Cream Pies:
Using same vanilla mixture, as above: Pour into pie shell. Let cool slightly. Mix approximately 1/2 cup coconut flakes into pie while in shell. Sprinkle meringue with coconut before browning.

For Banana Pudding:
Do not thicken as much as for pies. Probably 2/3 cup of cornstarch instead.

**You can mix ALL ingredients together for the vanilla pies, although it tends to scorch more easily. To prevent scorching, stir CONSTANTLY!
