1/3 cup butter
1 cup sugar
1 1/2 cups flour
1 teaspoon baking powder
1 teaspoon ground cinnamon

1/2 cup dark raisins

Instructions:

Grease and lightly flour one 1.5L / 1.5 quart loaf pan (14cm x 23cm / 5 x 9). Preheat oven to 350 degrees Fahrenheit.
In a large mixing bowl, cream butter and gradually blend in the sugar.
In a separate bowl, whisk together the flour, baking powder, cinnamon and cloves. Set aside.
In a separate bowl, add raisins, cherries and one tablespoon of flour. Mix until the fruit is lightly floured to prevent sticking. Add more flour if needed. Set aside.
In a separate bowl, add baking soda to soup and whisk gently, until thoroughly mixed. This mixture will rise, so the bowl must be at least twice the size of the soup.

Add the soup mixture to the butter mixture and beat slowly. Then add the flour mixture and beat slowly. Scrape down the sides of the bowl. Mix in the fruit.
Pour into loaf pan. Bake 50 minutes until cake tester comes clean. Let cool in pans 15 minutes. Turn out of pans and let cool completely before wrapping in plastic. This cake can be frozen for about a month.
