3/4 cup (175 mL) butter, softened
1/2 cup (125 mL) granulated sugar
1/4 teaspoon (1 mL) salt
2 cups (500 mL) all-purpose flour

Ingredients for Lemon Topping:

4 eggs
1 1/2 cups (375 mL) granulated sugar
2 tablespoons (25 mL) finely grated lemon rind
1/2 cup (125 mL) lemon juice
1/4 cup (50 mL) all-purpose flour
1 teaspoon (5 mL) baking powder

2 teaspoons icing sugar (10 mL)

Grease and lightly flour two glass 2-quart (2L) 20cm x 20cm (8 x 8) square pans, or alternatively use one 13 x9 (3.5L) pan.

Preheat oven to 325 F (160 C), for approximately 10 minutes.

Crust: In a bowl, beat together butter, sugar and salt until light and fluffy; stir in flour in two additions. Press evenly into prepared pans. Bake in the center of a 325 F (160 C) oven 18-20 minutes or until golden. Let cool in pan on rack (5 min).

Lemon Topping: Meanwhile, in a bowl, beat eggs with sugar until pale and thickened; beat in lemon rind, lemon juice, flour and baking powder. Pour evenly over baked crust. Bake at 325 F (160 C) for 20-25 minutes or until golden brown and the centre is set. Cool in the pan on a rack.

Cover with plastic and refrigerate until ready to cut (up to 4 days).

Sprinkle icing sugar over the top, and then cut into 1 1/2-inch squares.

Squares may be frozen in a well-sealed container for up to a month.
