1/4 cup melted butter
1 1/2 cups graham crumbs
1 cup creamiest cottage cheese
1 can sweetened condensed milk
1 T. (1 pkg) unflavoured gelatin*
1/2 cup lemon juice
rind of one lemon
1 cup whipped cream

Directions:
Directions:
Mix butter & crumbs together, press into bottom of pan. A round or square pan works equally well. Mix together all remaining ingredients, except for the whipped cream. *When you come to the gelatin, dissolve it in ΒΌ cup cool water, stirring it, & allowing it a few minutes to dissolve before adding to mixture. Gently fold in the whipped cream. Spread over crumbs; refrigerate & allow to set for several hours before serving. You may top with fresh fruit or serve simply as it is.

You can make this a gluten free recipe simply by substituting gluten free cookie crumbs for the base. If you need a substitute for the condensed milk due to allergens in the ingredient list, use the recipe for that included in this collection.
