1 gallon beets
2 c. sugar
3 1/2 c. vinegar
1 1/2 c. water from cooking beets
1 stick cinnamon
1 tsp. all spice

Directions:
Leave 1/2 inch stems on beets. Wash. Cover with water and cook until slightly soft. Cool. Slide skin off beets. Dice or slice. Boil sugar, vinegar, beet water and spices. Add beets. Heat thoroughly. Can.

This is Grandma's original recipe. Instead of using the cinnamon sticks and all spice I usually use 1 T. (or a little more) mixed spices.
