1 cup green lentils
2 teaspoons Dijon Mustard
Juice of 1 lemon
1/2 teaspoon cayenne
1/2 teaspoon cardomom
3 tablespoons olive oil
1 teaspoon sea salt
1 small onion diced into 1/2 inch size
2 chilies diced into 1/2 inch size

Directions:
Directions:
Rinse lentils and cook in a medium saucepan with 3 cups of water until tender.
Drain lentils and smash them a little with a spoon and set aside to cool.
Mix Mustard, lemon, cayenne and olive oil in a separate bowl to make seasoning.
Add seasoning, chilies and onion to the lentils and mix well.
Serve with pita bread and enjoy.
