1/2 lb. firm fish, cod, haddock, etc.
1 small white onion, chopped
2 medium potatoes, cubed
2 stalks celery, diced
1 carrot, diced
1 cup boiling water
1 cup clam juice or chicken broth
1 cup half and half
1 tsp. Two Brothers Seasoning
1 tsp. Everglades Seasoning
1 tsp. Old Bay Seasoning
2 tbs. butter
Salt & Pepper to taste

Cut fish into bite size pieces and set aside. Melt butter in large saucepan and add vegetables, cook on medium until onions are translucent, about 5 minutes. Add the water, broth and salt and pepper. Cover and simmer until vegetables are tender, about 10-15 minutes. Add fish and cook another 10 minutes. Remove from heat and add half & half, let sit to thicken.
